The Hilly Billy Cooking Contest

The participants of the Hilly Billy contest will start on Monday 15 September at 7.30 AM. They are to bring one local ingredient from their home region that they love to cook with. In Restaurant De Librije each participant will be given a contest folder, which contains, among other things, a map with a selection of our suppliers, producers and picking spots in a radius of about 60 kilometres around Restaurant De Librije. The participant and his assistant will then use their own vehicle to head out and gather ingredients. They are to go to these suppliers, producers and farmers to pick up ingredients and be back at Restaurant De Librije by noon. The participants will then have ninety minutes to work on the technical aspects of the dish and make all the preparations. They are allowed to use all the equipment the restaurant has available. Next, all products will be placed in a cooler for transport to the final location. At this location, the participant and his assistant will have another ninety minutes to prepare the dish for four people using a Large Big Green Egg with various accessories.
Finally, the dish will be evaluated by a group of judges consisting of Sergio Herman, Gert de Mangeleer, Jonnie Boer and others.
The award ceremony will take place that same night on the stage of Theater De Spiegel. The winner of the Hilly Billy contest will become the proud owner of a Big Green Egg XXLarge.
